Ingredients:

  • 1 cup cooked chickpeas (or 1 can, drained and rinsed)
  • 1/2 large red bell pepper (roasted over an open flame until charred)
  • 2–3 tbsp tahini (adjust to taste)
  • 2 tbsp olive oil (plus more for topping)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1–2 garlic cloves
  • 4 tsp coriander seeds
  • Salt to taste
  • Optional: ½ tsp smoked paprika for extra smokiness
  • 1 ice cube

🔥 To Roast the Bell Pepper:

  1. Place the pepper directly on a gas flame or under a broiler.
  2. Let it blister and blacken on all sides.
  3. Once charred, remove seeds, and roughly chop.

🌀 To Make the Hummus:

  1. In a blender or food processor, add chickpeas, roasted pepper, tahini, lemon juice, garlic, corriander seeds, salt, and olive oil, ice.
  2. Blend until you get your desired creaminess.
  3. Taste and adjust seasoning.

🍋 To Serve:

  • Drizzle with olive oil.
  • Sprinkle smoked paprika, sesame seeds, or za’atar.
  • Serve with warm pita, crackers, or veggie sticks.
