Ingredients:
- 1 cup cooked chickpeas (or 1 can, drained and rinsed)
- 1/2 large red bell pepper (roasted over an open flame until charred)
- 2–3 tbsp tahini (adjust to taste)
- 2 tbsp olive oil (plus more for topping)
- 2 tbsp lemon juice (freshly squeezed)
- 1–2 garlic cloves
- 4 tsp coriander seeds
- Salt to taste
- Optional: ½ tsp smoked paprika for extra smokiness
- 1 ice cube
🔥 To Roast the Bell Pepper:
- Place the pepper directly on a gas flame or under a broiler.
- Let it blister and blacken on all sides.
- Once charred, remove seeds, and roughly chop.
🌀 To Make the Hummus:
- In a blender or food processor, add chickpeas, roasted pepper, tahini, lemon juice, garlic, corriander seeds, salt, and olive oil, ice.
- Blend until you get your desired creaminess.
- Taste and adjust seasoning.
🍋 To Serve:
- Drizzle with olive oil.
- Sprinkle smoked paprika, sesame seeds, or za’atar.
- Serve with warm pita, crackers, or veggie sticks.
